One of my all-time favorite foods are eggs. Mainly because it is so very versatile, cheap and a perfect protein. My favorite snack-on-the-go is a hard-boiled egg – very healthy, and it comes with its own wrapper!
In the summertime, the egg is wonderful in a salad, and as a light main dish. It is easy to cook, and you don’t have to heat up the kitchen to make an omlette for a summertime supper.
I really love omlettes. You can make them out of ANYTHING!!! I love vegies in my omlettes and leftovers are sometimes a stroke of genius! Here is a sample of some omlette fillings I make all the time:
spinach with bacon and cream cheese
mushrooms, ham and swiss cheese
French omlette – havarti cheese and fresh herbs (thyme or oregano or basil)
Northwest omlette – smoked salmon cream cheese and spinach
Italian omlette – leftover spaghetti sauce with parmesan cheese
Spanish omlette – salsa, sour cream and leftover taco meat
These are just a few options – the possibilities are endless. Play with your omlette – try new combinations. Don’t be afraid to experiment. The eggselent egg is very forgiving.
